As we always try to preserve food, our farmers had excess cauliflower and our friend at Jozi Uncooked turned these into ferments. Try them, they are good for you, your gut and delicious.
The good stuff
This wonder veg contains an anti-inflammatory phytochemical called glucoraphanin which can help prevent the build-up of fat in the blood vessels, thus maintaining cardiovascular health. It also provides up to 75% of your RDA of vitamin C.
How to eat?
Cauliflower has become many people’s low-carb replacement for rice or mash. Blitz raw to create “rice grains” or boil and then mash as a substitute for potatoes. It also makes a lovely curry.
