Red onions get their deep colour from a plant pigment called anthocyanin, which has been found to protect against certain types of cancer and diabetes. They also contain compounds that are said to aid in controlling high blood sugar.

How to eat?
Red onions are best eaten raw in salads or made into a pickle using lemon juice or vinegar.
