The good stuff
The gel of aloe leaves has been used for centuries as a salve for minor skin irritations or burns. Consuming aloe is also said to help with constipation but eating too much can have a laxative effect. Aloe vera juice has become extremely popular over the last few years and is said to alleviate IBS and other digestive ailments.

How to eat?
Remove the hard, outer skin of the leaves and chop the “meat” into small chunks. These can be used in salads (very popular in Southeast Asian cuisine) or soaked in water overnight to create juice.
