A part of the sunflower family, tarragon is rich in iron, manganese and potassium and is said to improve insulin sensitivity. Some people also swear by tarragon for improving sleep and helping relieve insomnia.
How to eat?
Dried or fresh, the herb pairs very well with roast vegetables and white meats like fish and chicken. It can also be dried and made into a tea.
