Like other leafy greens, amaranth/morogo are packed with iron and vitamin A, making this food useful to those who are anaemic. In Ayurvedic medicine the leaves are often used to treat diarrhoea and manage heart health.
How to eat?
Most people will have their own special way of cooking these leafy greens, but there’s nothing quite like fried morogo leaves with onion, butter and a bit of tomato.
