Green beans are a form of protein and a good source of minerals, especially manganese which helps to metabolise cholesterol and carbohydrates and heal wounds. One cup contains 37mg of calcium and 25% of your RDA of vitamin C.
How to eat?
Blanch or steam to avoid overcooking – the bean should still have a snap to it. Add raw to salads or serve as a side dish with some fried onions.
