Beetroot – Mixed
The good stuff
These root vegetables are packed with antioxidants and rich in folic acid and glutamine, an amino acid that is essential for gut health. The gorgeous pink colour of beetroot comes from a pigment called betacyanin, which is said to suppress certain types of cancers.
How to eat?
Roast until caramelised in the oven and eat as is or add to a rocket, walnut and halloumi salad. Also great for making fresh veggie juices, on its own or mixed with other fruits and veggies.
