There’s a reason why you were told carrots are good for vision – the beta carotene that gives them their bright colours is turned into vitamin A, which promotes eye health. Carrots are also a good source of lycopene and polyacetylenes which are both known for their anti-cancer properties.
How to eat?
Snack on them raw; roast, steam, add to stews, soups and curries – they go with everything!
