The good stuff
The antioxidant lutein is only present in green peppers and not the riper, yellow and red varieties. Together with zeaxanthin, lutein protects your retina and can prevent deteriorating eye health and cataracts.
How to eat?
Since the green variety is slightly less sweet than its colourful counterparts, it’s perfect for adding to dishes that will cook for longer, such as stews and pasta sauces. Green peppers are also lovely stuffed with veggie rice and baked in the oven or on the braai.
