The good stuff
These gluten-free root vegetables are rich in vitamin B6, which is good for brain health, and contain a starch called ‘resistant starch’, which has been positively linked to insulin resistance and thus blood sugar regulation. The skins of potatoes contain loads of potassium, which can protect against stroke and osteoporosis.
How to eat?
Bake rather than fry and try to avoid overloading with fats like butter or sour cream. Rather salt lightly, swizzle with some olive oil and top with some delicious dried herbs like oregano and rosemary.
