Part of the cucumber family, gems are full of beta-carotene which is great for heart health, as well as folate and potassium. Don’t forget to save and eat the seeds too, which are full of zinc and omega 3 oils.
How to eat?
Boil until the hard, green skin becomes soft enough to pierce with a knife. Cut in half, remove any hard seeds and then drizzle with some olive oil and salt to taste.
